Il vino ha una lunga storia documentata che risale a più di 7,5 mila anni fa. I primi residui sospetti di vino risalgono all’inizio e alla metà del V millennio a.C. - Hajji Firuz Tepe, nei Monti Zagros settentrionali dell’Iran. Altre informazioni e dati storici indicano l’esistenza del vino nell’antichità, risalente all’età della pietra, circa 6000 anni fa, in Mesopotamia e in Egitto, che simboleggiava il sangue di Cristo e il cristianesimo. Storicamente il vino è stato associato a celebrazioni e culti, oltre che a un tranquillante per lo spirito umano. Infatti Ippocrate, padre della medicina, usava il vino come parte integrante delle sue medicine e ne raccomandava l’uso come diuretico e antisettico generale. Il genere Vitis e le sue 700 specie diverse, in particolare la Vitis vinifera, sono interessanti per i produttori di vino. La Vitis vinifera è originaria del sud del Mar Nero, dove viene coltivata in Transcaucasia. Per la prima volta la coltivazione dell’uva viene menzionata nella Bibbia (Genesi IX, xviii). Dalla sua prima comparsa, segnalata a sud delle montagne del Caucaso, la coltivazione della vite e la produzione di vino si sono diffuse fino in Egitto.
