I vini biologici e biodinamici arricchiscono da tempo il mercato vinicolo. Da alcuni anni, però, un nuovo termine sta facendo scalpore nel mondo del vino: 'vini naturali'. Si tratta in realtà della forma più antica di vino, poiché questo metodo di vinificazione esiste da quando l’uva viene trasformata in vino. Non esiste (ancora) una definizione precisa di 'vini naturali' né un’etichetta o un’organizzazione che certifichi questo tipo di vino. I produttori di vini naturali sono viticoltori che non solo coltivano i loro vigneti secondo criteri biologici o biodinamici, ma lavorano anche in cantina senza o con pochissimi additivi. L’obiettivo è ottenere vini il più possibile genuini e naturali. Gli esperti e i consumatori di vino sono spesso dell’opinione che i vini naturali appartengano a una categoria di vini completamente diversa dal punto di vista sensoriale e gustativo. 'La differenza sta nel gusto?' Alla ricerca di una risposta per capire se questa ipotesi è giustificata e se i vini naturali si differenziano effettivamente dai vini non naturali in termini di caratteristiche sensoriali, Alexander Hirt approfondisce l’argomento in questo studio.
