La production mondiale de viande contribue de manière significative aux émissions, aux besoins en eau et à l’utilisation des sols. Dans ce contexte, outre une offre croissante de sources de protéines végétales, on investit de plus en plus dans la recherche sur la viande cultivée. La viande cultivée est de la viande authentique issue de cellules souches adultes cultivées in vitro. Le présent travail examine les associations, les attentes en matière de produits et les attitudes envers la viande cultivée sur la base d’un échantillon représentatif de 816 consommateurs omnivores en Autriche. De plus, des segments de consommateurs sont formés à l’aide d’une analyse en cluster en fonction de l’acceptation de ce substitut de viande. Les résultats du travail montrent des différences significatives dans l’acceptation de la viande cultivée en fonction de l’ethnocentrisme du consommateur et de son affinité pour la technique, et identifient quatre clusters qui se distinguent par l’acceptation et la fréquence de la consommation de viande. De plus, il s’avère que les consommateurs orientés vers le monde, technophiles et bien formés sont les plus intéressés par la viande cultivée et représentent un groupe d’acheteurs potentiels.
