La produzione globale di carne contribuisce in modo significativo alle emissioni, al fabbisogno idrico e al consumo di suolo. In questo contesto, oltre a una crescente offerta di fonti proteiche di origine vegetale, si sta investendo maggiormente nella ricerca sulla carne coltivata. La carne coltivata è una vera e propria carne ottenuta da cellule staminali adulte coltivate in vitro. Questo studio analizza le associazioni, le aspettative sui prodotti e gli atteggiamenti nei confronti della carne coltivata sulla base di un campione rappresentativo di 816 consumatori onnivori in Austria. Inoltre, le analisi dei cluster sono state utilizzate per formare segmenti di consumatori in relazione alla loro accettazione di questo sostituto della carne. I risultati dello studio mostrano differenze significative nell’accettazione della carne coltivata in base all’etnocentrismo dei consumatori e all’affinità con la tecnologia e identificano quattro cluster che differiscono nell’accettazione e nella frequenza del consumo di carne. Inoltre, è emerso che i consumatori orientati al mondo, esperti di tecnologia e con un buon livello di istruzione mostrano il maggiore interesse per la carne coltivata e rappresentano un gruppo di potenziali acquirenti.
