Văn hóa ẩm thực là một hệ thống biểu tượng những tập quán và khẩu vị của một dân tộc giúp cho các thành viên nhận diện được qua ẩm thực, bản sắc văn hóa của mình thuộc về dân tộc đó.Về văn hóa ẩm thực của người Việt, sau khi điểm qua nhiều tài liệu về văn hóa ẩm thực (sách khảo cứu, thuyết trình, hội thảo...), chúng tôi có những nhận xét sau: Văn hóa ẩm thực đang phát triển mạnh và theo đường lối của UNESCO có nghĩa chủ yếu của các trung tâm, hiệp hội văn hóa ẩm thực là tìm kiếm, giới thiệu các món ăn độc đáo của mỗi miền, mỗi địa phương nhằm xác nhận bản sắc văn hóa, thí dụ Hà Nội có Trung tâm UNESCO Văn hóa Ẩm thực Việt Nam, UNESCO Center for Vietnamese Gastronomy Culture; Sài Gòn có hôi Hành trình tìm kiếm giá trị Văn hóa Ẩm thực Việt Nam, ẩm thực Huế nổi dậy với cơm cung đình... nhằm giới thiệu văn hóa ẩm thực Việt với ngoại quốc bằng các món ăn độc đáo của bếp Việt.
