Le fruit du palmier dattier (Phoenix dactylifera L.) est bien connu pour ses bienfaits nutritionnels et sanitaires dans les régions arides et semi-arides. Ce fruit est composé d’un chair ou pulpe et d’un noyau. Le poids moyen des noyaux de dattes (graines) s’étend entre10% et 15% du poids de la datte. Le noyau de datte est riche en sucre, en minéraux, en particulier le fer et en lipides. Premièrement nous avons extrait de l’huile par la méthode chimique Soxhlet qui a donné un rendement en huile de l’ordre de 7,8 % suivie par des analyses physico-chimiques; acidité, l’indice de saponification et de réfraction et la densité et pH. Ceux-ci se sont avérés être respectivement de (1.2 mg de KOH/g), (200,5 mg KOH /g huile), (1.467), (0.908), (7.1). L’activité antioxydante par la méthode de piégeage les radicaux libres du DPPH, et a montré que notre Huile possède une activité moyenne (IC50: 0.508 mg/ml), par rapport au standard; acide ascorbique (IC50: 0,450 mg / ml). Ensuite, nous avons incorporé l’huile de noyau de datte dans la synthèse d’un savon et, d’autre part, étudié les caractéristiques physico-chimiques des savons obtenus.
