This study analyzes the physicochemical diversity and antioxidant properties of date palm varieties from the Mauritanian Adrar. Twenty-eight varieties showed significant differences in physicochemical traits regardless of oasis origin. Phenolic compounds, flavonoids, and antioxidant activity were higher at early maturity and decreased during ripening, with strong correlations between polyphenols and antioxidant capacity. Certain varieties showed particularly high values.
