Questo studio analizza la diversità fisico-chimica e le proprietà antiossidanti delle varietà di palma da dattero dell’Adrar mauritano. Ventotto varietà hanno mostrato differenze significative nei tratti fisico-chimici, indipendentemente dall’origine dell’oasi. I composti fenolici, i flavonoidi e l’attività antiossidante erano più elevati all’inizio della maturazione e diminuivano durante la maturazione, con forti correlazioni tra polifenoli e capacità antiossidante. Alcune varietà hanno mostrato valori particolarmente elevati.
