Il riso è una pianta monocotiledone della famiglia delle Graminacee o Poaceae. Il riso coltivato appartiene a due specie botaniche del genere Oryza(Oryza sativa e Oryza glaberrima). La specie più coltivata è Oryza sativa L, diploide, autoimpollinante e originaria dell’Asia meridionale e sudorientale (Second, 1982). Si pensa che sia stato addomesticato daOryza rufigon in India e Cina oltre 10.000 anni fa. Gli europei introdussero il riso asiatico in Africa a partire dal XV secolo e successivamente in America. La specie Oryza glaberrima o riso africano o riso Casamance è originaria dell’Africa centrale ed è stata addomesticata in Africa occidentale per 3.500 anni. Una terza specie di riso risultante da un incrocio tra Oryza sativa L (riso asiatico) e Oryza glaberrima (riso africano) è coltivata in Africa e nel resto del mondo: il 'Nuovo Riso Africano' o NERICA. Il suo germoplasma offre una speranza concreta di migliorare la produttività, la redditività e la sostenibilità della coltivazione del riso in Africa.
