La mango è un importante frutto tropicale, molto apprezzato per le sue caratteristiche nutrizionali. Pertanto, questo lavoro ha avuto lo scopo di analizzare quantitativamente la presenza di glucosio e fruttosio in tre varietà di mango: Tommy, Espada e Rosa. Per l’analisi quantitativa dei carboidrati sono stati utilizzati i test della glucosio ossidasi e colorimetrico per il fruttosio utilizzando il resorcinolo. I risultati hanno dimostrato che il periodo e la stagione dell’anno possono influenzare lo stato o il processo di maturazione dei frutti, evidenziando la necessità di determinare i livelli di glucosio e fruttosio dei manghi in una determinata stagione o periodo dell’anno. I risultati finali per la stagionalità 2016/2017 hanno evidenziato che il mango Tommy ha presentato i livelli più bassi di glucosio e fruttosio.
