La domanda di pesce e di altri prodotti alimentari acquatici in Tunisia è in costante aumento. Tuttavia, il consumo di pesce è caratterizzato da un’ampia disparità tra le specie, legata a una serie di fattori quali le qualità organolettiche e la disponibilità.In particolare, le caratteristiche della composizione alimentare, e più specificamente la qualità dei lipidi, conferiscono al pesce eccellenti proprietà nutrizionali e il suo consumo dovrebbe essere raccomandato per i suoi diversi benefici.In questo contesto, abbiamo studiato i profili lipidici di tre popolazioni di Symphodus tinca della costa tunisina. I risultati hanno mostrato differenze inter- e intra-stazionali in base al sesso e all’organo.L’identificazione degli acidi grassi mediante HPLC ha mostrato che le parti combustibili del pesce sono effettivamente ricche di omega 3 e omega 6 con un rapporto equilibrato.
