Die Forschung der letzten Jahre hat gezeigt, dass phenolische Verbindungen keineswegs träge Stoffwechselprodukte sind. Sie unterliegen in Pflanzengeweben erheblichen quantitativen und qualitativen Schwankungen und zeugen somit von einer unbestreitbaren biochemischen Dynamik. Es wurden einige Hypothesen aufgestellt, die besagen, dass Pflanzen verschiedene Mittel einsetzen, um sich gegen Angriffe aus ihrer Umwelt wie Insekten, Bakterien, Schimmelpilze usw. zu verteidigen.Schimmelpilze usw. Bei einigen dieser Abwehrmaßnahmen werden chemische Verbindungen eingesetzt, die mit dem Stoffwechsel des Angreifers interagieren, wodurch dieser vergiftet und beeinträchtigt wird, was ihn von weiteren Angriffen abhalten könnte. Die Akkumulation von Polyphenolverbindungen könnte daher als unspezifische Reaktion auf verschiedene Arten von Angriffen angesehen werden. Diese Hypothese veranlasste uns zu einer Studie über die Korrelation zwischen dem Gesamtpolyphenolgehalt in den Körnern zweier Trockenbohnenarten, die sich in der Farbe und der Widerstandsfähigkeit gegen Pilzbefall unterscheiden.
