Il presente studio si proponeva di produrre pectinasi da inserire nella razione delle bufale in lattazione. La massima produzione di pectinasi da parte di A.niger è stata ottenuta con una concentrazione di polpa di barbabietola da zucchero del 16%, una dimensione dell’inoculo del 5%, un periodo di incubazione di 48 ore, un pH iniziale del terreno di coltura pari a 7,0 e un estratto di lievito come fonte di azoto alla concentrazione di 0,33 g N/l. Sono stati condotti due esperimenti per valutare gli effetti dell’integrazione di enzimi fibrolitici sulla degradazione in vitro della polpa di barbabietola da zucchero e sulla digeribilità in vivo dei nutrienti, sulla produzione di latte e sulla sua composizione nelle bufale in lattazione mite. Nell’esperimento in vitro, la sostanza secca e la scomparsa di sostanza organica sono state determinate per la polpa di barbabietola da zucchero integrata separatamente con enzimi fibrolitici prodotti in laboratorio (Asperozym) e con una fonte commerciale di enzimi fibrolitici (Tomoko) a 3 livelli (0, 1, 1,5 e 2 g / kg DM).
