Целью данного исследования было выделить и очистить пигмент фикоцианин, создать нанокапсулы, оценить его антимикробные и антиоксидантные свойства, проследить, как рН, температура и свет влияют на стабильность фикоцианина в свободной и инкапсулированной формах с течением времени, и, наконец, проанализировать его влияние на вкус и текстуру мороженого. Методы извлечения фикоцианина включали ультразвук, замораживание, ферментативные и неорганические растворители, а затем очистку сульфатом аммония. Нанокапсулирование осуществлялось с помощью мальтодекстрина и казеината натрия, используя ультразвуковые и ультрагомогенизационные методы.
