Fermentierte Milch ist eine Quelle bioaktiver Peptide, die die Darmfunktionen modulieren können. Hydrolysate fermentierter Milch von Lactobacillus paracasei, Enterococcus faecalis, Enterococcus faecium, Bifidobacterium longum, Lactobacillus plantarum und Streptococcus thermophillus wurden analysiert. Ihre Wirkung auf den Darm von β-Lg- und milchsensibilisierten Mäusen, gefolgt von der Histologie des Jejunums, wurde unternommen. Die Ergebnisse zeigten, dass die Stämme eine proteolytische Leistung und eine antioxidative Kapazität aufweisen. Die präventive Wirkung zeigt bei den Tieren, die die Hydrolysate erhielten, eine leichte Produktion von IgG und IgE gegen Blg. Die Ex-vivo-Studie zeigt, dass die Reaktion auf Allergenstimulation niedriger ist. Die histologische Untersuchung des Darms ergab bei einigen Gruppen kleine Schädigungen mit geringeren Entzündungszeichen und mehr oder weniger vergrößerten Zotten. Wir kamen zu dem Schluss, dass die Hydrolysate eine präventive und therapeutische Wirkung haben und einen schützenden Effekt auf das Darmepithel zu haben scheinen. Der Stamm L.paracasei ist ein interessanter Kandidat, da sowohl die therapeutische als auch die präventive Wirkung ausgeprägt sind.
