Os leites fermentados são fontes de péptidos bioactivos que podem modular as funções intestinais. Foram analisados os hidrolisados de leite fermentado com Lactobacillus paracasei, Enterococcus faecalis, Enterococcus faecium, Bifidobacterium longum, Lactobacillus plantarum e Streptococcus thermophillus, cuja ação no intestino de ratinhos sensibilizados à β-Lg e ao leite foi seguida de histologia do jejuno. Os resultados mostraram que as estirpes tinham um desempenho proteolítico e uma capacidade antioxidante. O efeito preventivo mostrou uma ligeira produção de IgG e IgE anti-Blg em animais alimentados com os hidrolisados. O estudo ex-vivo mostrou que a resposta à estimulação com alergénios foi menor. O estudo histológico intestinal revelou, em alguns grupos, danos menores com sinais inflamatórios mais fracos e vilosidades mais ou menos aumentadas. Concluímos que os hidrolisados têm um efeito preventivo e terapêutico e parecem ter um efeito protetor sobre o epitélio intestinal. A estirpe L.paracasei é um candidato interessante devido aos seus efeitos terapêuticos e preventivos marcados.
