Il miele è un prodotto naturale elaborato dalle api a partire dal nettare dei fiori, possiede proprietà nutritive, terapeutiche e un alto valore commerciale. È un prodotto biologico complesso, la cui qualità e composizione fisico-chimica variano notevolmente a seconda della flora visitata, delle condizioni climatiche ed edafologiche della regione di produzione e della gestione dell’apicoltore. Il controllo della qualità del miele non è una pratica comune tra produttori e commercianti. Il presente lavoro analizza le caratteristiche fisico-chimiche e microbiologiche dei mieli di api Apis mellifera prodotti da diverse associazioni e apicoltori informali nel Sertão della Paraíba. Sono stati analizzati 20 campioni di diversi produttori e marche, con test condotti con un numero minimo di tre ripetizioni. In base ai risultati, si è riscontrato che, tra i mieli analizzati, quelli acquistati da produttori informali erano quelli che presentavano il maggior numero di parametri non conformi alle norme di qualità vigenti nel paese e che, nonostante la scarsa fiducia che i campioni di miele venduti informalmente trasmettono al consumatore, non è stato rilevato alcun prodotto con segni di frode nei campioni analizzati.
