Il latte è un prodotto agricolo altamente nutriente e la base di una catena di produzione che genera posti di lavoro e reddito, ma la sua qualità è storicamente scarsa e stagionale in varie regioni del Brasile, influenzata principalmente dalle variazioni climatiche e dalle condizioni di produzione. Per migliorare la qualità di questa materia prima, le organizzazioni dell’industria lattiero-casearia hanno messo in atto misure di controllo e incentivi, come istruzioni normative e pagamenti per la qualità. I criteri normativi sono piuttosto rigidi, ma se la qualità del latte non è soddisfacente dal punto di vista legale, può mettere a rischio non solo la resa industriale, ma anche la sicurezza alimentare e il reddito del produttore. Pertanto, questo studio cerca di rispondere alla seguente domanda: qual è la qualità del latte crudo refrigerato in relazione al quadro giuridico e all’influenza della sua stagionalità sul prezzo pagato ai produttori? Questo studio fornisce alla comunità scientifica e ai membri della catena di produzione del latte informazioni preziose e risultati rilevanti per prendere decisioni sul miglioramento della qualità del latte crudo refrigerato e sulla remunerazione dei produttori.
