Einleitung: Pflanzliche Indikatoren sind natürlich vorkommende Substanzen pflanzlichen Ursprungs, die als Reaktion auf Veränderungen des pH-Werts oder der chemischen Umgebung deutliche Farbveränderungen zeigen. Diese pflanzlichen Indikatoren dienen als umweltfreundliche, biologisch abbaubare und ungiftige Alternativen zu synthetischen chemischen Indikatoren, die traditionell in der analytischen Chemie und bei Titrationen verwendet werden.Quellen für pflanzliche Indikatoren: Zu den gängigen Pflanzen, die als Indikatoren dienen, gehören: Hibiscus rosa-sinensis (Schuhblume), Rosa indica (Rose), Beta vulgaris (Rote Bete), Brassica oleracea (Rotkohl), Curcuma longa (Kurkuma) und Clitoria ternatea (Schmetterlingserbse) Diese Pflanzen enthalten natürlich vorkommende Pigmente wie Anthocyane, Flavonoide, Betalaine und Curcuminoide, die unter verschiedenen pH-Bedingungen sichtbare Veränderungen durchlaufen. Wirkmechanismus: Die Farbveränderung bei pflanzlichen Indikatoren beruht auf der strukturellen Umwandlung der Pigmentmoleküle unter sauren oder basischen Bedingungen. Anthocyane (in Rotkohl, Hibiskus und Rose enthalten) wechseln ihre Farbe von rot (sauer) über violett/blau (neutral) zu grün/gelb (basisch). Curcumin (aus Kurkuma) ist in sauren/neutralen Medien gelb und färbt sich in basischen Medien rotbraun.Anwendungen in der Forschung.
