A termografia por infravermelhos (TI) é uma técnica de diagnóstico bidimensional e sem contacto para medir a temperatura da superfície dos materiais, que pode ser utilizada de forma útil na avaliação não destrutiva da qualidade. Os avanços tecnológicos levaram à utilização crescente da TI como ferramenta de diagnóstico, registando imagens espacialmente resolvidas das temperaturas superficiais. A TI é amplamente utilizada em aplicações de vigilância e foi originalmente concebida para uso militar dos EUA em visão nocturna. O mapeamento da temperatura, em que se obtêm padrões de distribuição espacial e temporal da temperatura de um objeto, tem aplicação potencial na garantia da qualidade dos produtos alimentares, na caraterização da segurança e no cumprimento da autenticidade. As exigências crescentes de objetividade, consistência e eficiência na indústria alimentar tornaram necessária a introdução de técnicas de processamento de imagem baseadas em computador.
