Segurança alimentar e higiene alimentar não devem ser confundidas com higiene alimentar e segurança alimentar! Estes termos são mal utilizados na linguagem comum: embora segurança alimentar seja um termo que se refere à segurança do abastecimento alimentar em termos de quantidade e qualidade. Enquanto que a segurança alimentar é a garantia de que os alimentos não prejudicarão o consumidor quando preparados e/ou consumidos de acordo com a sua utilização prevista. Exemplos de meios implementados para a segurança alimentar são: controlo das origens, controlo da composição, detecção de fontes de contaminação bacteriana, controlo da cadeia de fabrico ou transformação e controlo da cadeia de frio. No entanto, higiene alimentar (dietética) é uma expressão médica que se refere à escolha racional dos alimentos (as regras de nutrição e dietética) e higiene alimentar (Higiene Alimentar) refere-se a todas as condições e medidas necessárias para garantir a segurança e salubridade dos alimentos em todas as fases da cadeia alimentar
