La vite è una coltura frutticola di importanza economica in tutto il mondo, essendo Vitis vinifera L. la specie che domina la produzione commerciale di uva, oltre a questa specie, si sa che nel genere Vitis ci sono circa 60 altre specie, distribuite principalmente nell’emisfero nord. Il vino è la bevanda che risulta dalla fermentazione alcolica del mosto d’uva. Ci sono fattori come il processo di vinificazione, la varietà e il metodo di coltivazione, che segnano le differenze negli attributi di un vino; tuttavia, il terreno, influenzato da luminosità, altitudine, latitudine, precipitazioni, pendenza, orientamento e tipo di suolo, è ciò che definisce la tipicità dell’uva e del vino, che si esprime nel contenuto di zucchero, acidità, colore e aroma, tra gli altri. In generale, la qualità è determinata dall’interazione della cultivar, il portainnesto, con il suolo e il clima prevalente in una regione in un dato anno. La gestione delle colture è un fattore fondamentale per la resa e la qualità delle uve da vino.
