La science des champignons couvre la production de champignons et comprend la biologie des champignons. Pleurotus ostreatus est facile à cultiver artificiellement et c’est aussi un champignon qui dégrade efficacement la lignine et qui peut pousser sur différents types de matériaux lignocellulosiques dans les régions tropicales, subtropicales et tempérées du monde entier. Pleurotus ostreatus est pauvre en graisses et en calories et convient donc aux patients diabétiques. Il est également riche en vitamines B, D, K et parfois en vitamines A et C. Il contient plus de protéines que n’importe quel autre aliment d’origine végétale et constitue également une bonne source de nutriments minéraux. La malnutrition est un problème dans les pays en développement du tiers-monde et, par conséquent, grâce à sa saveur, sa texture, sa valeur nutritionnelle et médicinale et sa productivité élevée par unité de surface, il constituera une excellente source alimentaire pour réduire la malnutrition dans les pays en développement. Pleurotus ostreatus est également efficace contre l’hypertension en raison de la prépondérance du K sur le Ca et de l’équilibre entre le K et le Ca.
