En las últimas décadas, diversas investigaciones han mostrado que los péptidos bioactivos pueden ser derivados de las proteínas de la dieta y estos pueden estar presentes como entidades independientes o codificadas en la proteína original y que durante la digestión gastrointestinal o procesamiento de los alimentos estos péptidos pueden ser liberados de la proteína precursora. Los péptidos bioactivos han sido aislados de diferentes fuentes tanto de origen animal como de origen vegetal y estos han presentado diversa actividad biológica en el organismo, como: antihipertensivos, opioides, antioxidantes, anticolesterolémicos, antimicrobianos, anticariogénicos, antitrombóticos e inmunomoduladores. Se hace un bosquejo de los principales péptidos bioactivos que existen hoy en día y se exponen sus principales fuentes de obtención (leche, carne, pescado, plasma de sangre humana y de bovino, girasol, espinaca, frijol mungo, soya, trigo entre otras).Por otro lado, se trata de explicar los diversos mecanismos de acción que pueden presentar estos componentes, mediante algunos estudios realizados in vitro como in vivo y por último se da una perspectiva general sobre el uso de ellos.
