La cachaça est la boisson brésilienne, plus connue que la samba et le football. C’est la deuxième boisson alcoolisée la plus consommée par les Brésiliens, juste après la bière. La production se divise en deux catégories : la cachaça artisanale (issue d’un alambic) et la cachaça industrielle (distillée en colonne). L’objectif de l’étude était d’évaluer la qualité de ces cachaça par le biais d’analyses physico-chimiques telles que l’acidité volatile, le titre alcoométrique, le pH, le cuivre, les alcools supérieurs, les aldéhydes, les esters, le furfural et le méthanol.
