O sésamo(Sesamun indicum L.) é uma cultura oleaginosa muito antiga, geralmente conhecida como astil, tal e gingelly. Pertence à ordem Tabiflorae e à família Pedaliaceae, com 16 géneros e 60 espécies diferentes, das quais várias podem ser cruzadas com S. indicum e algumas são também cultivadas pelas suas sementes. A cor observável das sementes varia do preto ao brancopuro . Trata-se de uma erva anual diploide (2n = 26) autopolinizada. É considerada uma cultura de regiões tropicais e subtropicais, mas também se espalhou para as partes temperadas do mundo . Na Índia, a cultura do sésamo é cultivada em todo o país durante todo o ano, ou seja, durante o Kharif, o semi-rabi, o rabi e o verão, como cultura única ou mista.
