Antioxidantien sind die Moleküle, die die Oxidation anderer Moleküle hemmen. Bei der Oxidation entstehen freie Radikale, die die Zellen schädigen und die Gesundheit in hohem Maße beeinträchtigen können. Antioxidantien gibt es sowohl in natürlicher als auch in synthetischer Form.
