Depuis des décennies, les micro-organismes sont connus comme producteurs de surfactants, l’une des classes les plus importantes de produits chimiques en vrac. Dans le cadre des préoccupations environnementales actuelles, les biosurfactants gagnent en intérêt en raison de leur faible toxicité et de leur bonne biodégradabilité. Ils constituent donc une alternative valable à leurs équivalents dérivés du pétrole. Starmerella bombicola est capable de produire des sophorolipides gycolipides. Grâce au génie génétique de cette levure, il est possible de créer de nouveaux biosurfactants naturels tels que les glucolipides et les sophorolipides bolaformes ou d’améliorer la biosynthèse d’une molécule spécifique au lieu du mélange produit par le type sauvage. Ces nouvelles souches et molécules possèdent des caractéristiques inédites et c’est pourquoi de nouveaux procédés de production ont été étudiés, impliquant à la fois la fermentation et la purification.
