L’Union européenne encourage actuellement l’utilisation de sous-produits agroalimentaires afin de réduire le gaspillage alimentaire, tout en favorisant l’utilisation de ressources biologiques et l’innovation. Le Portugal est un important producteur de vin, dont les exportations sont en hausse, ce qui témoigne du dynamisme du secteur. Le vin et la vigne contiennent des composés dotés d’un large éventail de propriétés biologiques qui peuvent être extraites. Les polyphénols sont un exemple de composés bioactifs très importants, dotés de différentes propriétés physiologiques, telles que des propriétés antioxydantes, cardioprotectrices et anticancéreuses, entre autres. En tant que tels, les sous-produits et les déchets de la production de vin ont de nombreuses applications potentielles, telles que les aliments fonctionnels, les produits pharmaceutiques et les cosmétiques. Les bienfaits de la consommation de vin rouge sont déjà reconnus et sont associés à la présence de certains composés polyphénoliques, mais ceux-ci ne suffisent pas à caractériser le vin en tant qu’aliment fonctionnel. C’est pourquoi l’intérêt pour les ingrédients fonctionnels à base de vin et d’extraits de vigne s’est accru, alimentant le concept de durabilité.
