L’eau est une ressource naturelle essentielle à l’existence, au maintien de la vie, au bien-être social et au développement socio-économique. Dans la ville de Belém, dans l’État du Pará, on trouve un nombre important de petites entreprises, mieux connues sous le nom de points de vente d’açaí, où la production quotidienne de pulpe d’açaí est élevée. L’objectif de l’étude était de quantifier et de caractériser les déchets générés par la production de pulpe d’açaí. Elle a été réalisée entre août et novembre 2014 dans deux points de vente d’açaí situés dans le quartier de Cidade Velha à Belém. La recherche a été divisée en quatre étapes : détermination des sites de recherche ; quantification des volumes d’eau consommés ; quantification et caractérisation physico-chimique des effluents ; et caractérisation et quantification physique des déchets solides produits. La recherche a révélé que 4,415 litres d’eau sont consommés pour produire 1 litre de pulpe, dont 5,92 litres d’effluents provenant de l’adoucissement et du lavage des fruits, et 0,0915kg/l. de graines et de lies.
