Die Veränderung der Ernährungsgewohnheiten in den letzten Jahren hat zum Auftreten von Zivilisationskrankheiten geführt, darunter auch Diabetes mellitus, der durch einen erhöhten Blutzuckerspiegel gekennzeichnet ist, der durch eine mangelnde Insulinsekretion oder eine zelluläre Insulinresistenz verursacht wird. Im Rahmen von diättherapeutischen Ansätzen wird der Verzehr von Getreideprodukten in möglichst vollwertiger Form bevorzugt. Sorghum (Sorghum bicolor L.), eine als wichtige Polyphenolquelle sehr bekannte Art, ist nach Weizen, Reis, Mais und Gerste die fünftgrößte Getreideart der Welt. Roggen (Secale cereale L.) kam erst recht spät in die Landwirtschaft, zumindest als eigenständige Kulturpflanze. Ziel dieser Arbeit ist es, die Wirkung von phenolischen Extrakten aus den beiden Getreidesorten auf die antioxidative Wirkung in vitro zu testen und anschließend die Wirksamkeit von Vollkorndiäten auf die Korrektur von Hyperglykämie und Dyslipidämie zu überprüfen.
