La contaminazione del suolo dovuta alla presenza di metalli tossici può avere gravi conseguenze negative, come il danneggiamento degli ecosistemi e della produttività agricola, il deterioramento della catena alimentare e gravi problemi di salute umana e animale. L’impatto dell’inquinamento del suolo (dovuto alle aree urbane e minerarie) sulla catena alimentare rappresenta una sfida per molte indagini. È stata esaminata la disponibilità di metalli essenziali e potenzialmente tossici nel suolo inquinato e il loro possibile trasferimento in vari alimenti vegetali. Sono state esaminate diverse specie di alimenti vegetali provenienti da aree inquinate e di riferimento (non inquinate): acetosa (Rumex acetosa), spinaci (Spinacia oleracea) e ortica comune (Urtica dioica) sono stati utilizzati come alimenti vegetali autoprodotti; aglio (Allium sativum), cipolla (Allium cepa) e prezzemolo (Petroselinum crispum) sono stati utilizzati come alimenti vegetali coltivati (specie vegetali). Per la determinazione del contenuto dei 21 elementi è stata utilizzata la spettroscopia a emissione atomica con plasma accoppiato induttivamente.
