La crescente domanda di formaggi e altri prodotti derivati dal latte di bufala ha stimolato lo sviluppo dell’allevamento di bufale in Brasile. In questo contesto, São Paulo si è distinta come uno dei principali stati brasiliani nella produzione e nell’industrializzazione del latte di bufala. Nonostante la crescente domanda e la valorizzazione della già nota mozzarella di bufala, i caseifici specializzati nella lavorazione del latte di bufala non trovano materie prime disponibili e, di conseguenza, non sono in grado di soddisfare tutta la domanda del mercato. Alla luce di ciò, il presente lavoro evidenzia i principali fattori positivi e negativi del complesso agroindustriale del latte di bufala nello Stato di San Paolo. Partendo dai concetti di agribusiness, filiera produttiva e complesso agroindustriale, vengono selezionati e valutati, attraverso interviste con diversi attori della filiera, i principali indicatori di competitività. In questo modo, gli attori pubblici e privati saranno in grado di proporre politiche e azioni strategiche che migliorino la competitività del complesso agroindustriale del latte di bufala nello Stato di San Paolo.
