Oltre all’effetto prebiotico, sono stati notati diversi altri vantaggi della gomma d’acacia: livelli più bassi di lattosio e assenza di fruttosio nel prodotto finale. Questi vantaggi vanno a favore dei consumatori intolleranti, oltre al potenziale beneficio per i diabetici sull’abbassamento dei livelli di glucosio nel sangue. La preferenza complessiva del panel di consumatori è stata a favore del latte fermentato arricchito con gomma d’acacia. Questo studio potrebbe essere il punto di partenza per nuovi test estesi e per lo sviluppo di nuovi prodotti.
