Ausgehend von der offenen Küchentypologie, die in den sozialen Raum des Wohnzimmers integriert ist und zu einem Ausdruck der Avantgarde geworden ist, und der traditionellen geschlossenen Küchentypologie untersucht dieses Buch die Marktstrategien zur Konsolidierung der offenen Modalität bei den Verbrauchern, die mit einem Image der Praktikabilität und Avantgarde verbunden ist. Es stützt sich auf die Ergebnisse einer Umfrage unter den Bewohnern von Wohnungen, die im Zeitraum 2000-2015 in der Stadt São Paulo errichtet wurden, um die Gründe für die Entscheidung für eine offene oder geschlossene Küche sowie die Vor- und Nachteile ihrer Nutzung zu ermitteln und diese Entscheidung mit den Gewohnheiten und Bräuchen bei der Essenszubereitung in Verbindung zu bringen. Der Wandel der Küche wird durch die Analyse von Wohnungsbauprojekten im gleichen Zeitraum dargestellt, wobei die Anordnung der wichtigsten Küchengeräte in linearer Anordnung und unter Berücksichtigung der geltenden Bauvorschriften hervorgehoben wird.
