L’applicazione della RMN dell’idrogeno si è rivelata essenziale nel controllo della qualità degli oli vegetali, poiché ha permesso di determinare l’indice di iodio, il peso molecolare (PM) medio del triacilglicerolo, il grado di insaturazione e lo stato di ossidazione dell’olio allo stato naturale e a qualsiasi tempo di riscaldamento, cosa che con i metodi fisico-chimici tradizionali sarebbe un compito arduo e impreciso in molti punti del processo di analisi della qualità. Allo stesso modo, la RMN di C13 si è rivelata molto utile, poiché ha mostrato variazioni significative nel profilo dei carboni C13 degli oli in natura e sotto stress termico. I risultati dimostrano che le tecniche spettroscopiche sono strumenti indispensabili, al giorno d’oggi, nel controllo della qualità degli oli vegetali.
