In dieser Arbeit werden spanische Weine aus ökologischem oder biologischem Anbau, aus biodynamischer und konventioneller Erzeugung charakterisiert. Ökologische Weine tragen das „euroleaf'-Label, biodynamische Weine das DEMETER-Label. 87 Proben wurden untersucht. Diese Studie wurde im Andalusischen Weinforschungszentrum durchgeführt, insbesondere im Bereich der analytischen Chemie. Die folgenden Parameter wurden analysiert: Routineanalysen - Gesamtsäuregehalt, pH-Wert, Alkoholgehalt, freies Schwefeldioxid und Gesamtschwefeldioxid -, Metalle - Eisen, Kalium und Magnesium -, Polyphenole - Kaffeesäure, p-Cumarsäure, Tyrosol, Quercetin-3-D-Galactosid, Quercitin-3-D-β-Glucosid, Catechin, Epicatechin, Gallussäure und Protocatechusäure -, und Infrarotspektroskopie im Wellenlängenbereich 950 cm-1 bis 8000 cm-1.
