As enzimas proteolíticas são enzimas importantes com amplas aplicações nos campos industrial e farmacêutico e são geralmente isoladas de animais, plantas e microrganismos. O isolamento, a purificação e a caracterização de novas enzimas proteolíticas têm uma importância considerável nos campos farmacêutico e bioquímico. Uma enzima proteolítica foi isolada do látex do caule da jaca (Artocarpus heterophyllus Lam.). Durante o trabalho, foi dada ênfase à caracterização físico-química, ao estudo cinético e termodinâmico, incluindo a sua possível aplicação clínica.
