Modern technology-based education and research are an important component for the academician, researcher and students. In view to achieve of innovative knowledge in the teaching and research on nutrition in plant, fruit and vegetables, the manuscript has been published. The modern technology or biotechnology which enhances to produce better quality of antioxidant, phytochemical, biochemical content, nutrition like carbohydrates and minerals in plant, fruit and vegetables for human health benefits has been mentioned well. Antioxidant, DPPH scavenger capacity, phenol, flavonoid, anthocyanin, vitamin A, B & C and polyphenol in medicinal plants, fruits and vegetables have been described well. Different types of phytochemicals (pigments) and nutrient contents in Plants, tea, coffee, fruit and vegetables have been stated well from different innovative research information. Moreover, secondary metabolites found in fruits and vegetables as food and human health benefits have been noted well which are an innovative finding described in this book.
