El suero lácteo es un subproducto generado en la industria de fabricación de quesos. Más del 50 % del suero lácteo generado no es convenientemente tratado, suponiendo graves problemas dada la gran cantidad de materia orgánica sin degradar descargado al medio ambiente. La valorización del suero lácteo tiene como fin la obtención de subproductos que tengan gran valor en el mercado. Una interesante alternativa son los polihidroxialkanoatos (PHA) a partir del desarrollo de nuevas tecnologías que busquen reemplazar los plásticos convencionales. Los PHA tienen propiedades similares a algunos plásticos de origen petroleoquímico y se pueden obtener a partir de residuos industriales. Actualmente la producción de PHA se realiza mediante utilizando biotecnología basadas en cultivos bacterianos puros, lo que aumentan los costes de producción. El empleo de cultivos microbianos mixtos se presenta como una alternativa mucho mas económica y con un proceso mas simplificado necesitando aun mayores estudios para obtener mayor acumulación y productividad.
