Au Sénégal, l’insécurité alimentaire est une réalité prégnante qui affecte 42 000 ménages, avec une prévalence critique de 46,7 % dans la région de Ziguinchor. Face à ce défi, les Produits Forestiers Non Ligneux (PFNL), et particulièrement les fruits forestiers (FF), constituent un levier de résilience indispensable pour les populations rurales durant la période de soudure.Cette étude, menée dans les arrondissements de Tenghory et Tendouck (Département de Bignona), vise à caractériser la valorisation nutritionnelle et fonctionnelle de ces ressources. La méthodologie a combiné des enquêtes auprès de 379 ménages, des analyses en unités de transformation (GIE) et des tests biochimiques rigoureux au laboratoire de l’ESP de Dakar.Les résultats montrent que le Madd (Saba senegalensis), le Toll (Landolphia heudelotii) et le Ditakh (Detarium senegalense) sont les espèces les plus consommées et commercialisées (fréquence de 100 % sur les marchés). La filière repose majoritairement sur les femmes, qui assurent 80 % de la commercialisation, générant des revenus vitaux pour l’économie domestique.Sur le plan nutritionnel, les fruits bruts révèlent un potentiel exceptionnel : le Rônier est le plus riche en protéines (2,7 %) et en phosphore, tandis que le Madd s’impose comme une source majeure de vitamine C (48 mg). L’étude souligne toutefois l’impact des procédés technologiques (sirops, confitures, marmelades) sur ces propriétés. Si la transformation favorise une hausse des glucides et du fer (jusqu’à 60,95 mg dans la marmelade de Ditakh), elle entraîne une perte drastique (souvent supérieure à 90 %) en protéines, phosphore et vitamine C en raison des traitements thermiques et de la dilution.Enfin, l’ouvrage alerte sur la dégradation du couvert forestier. Plus de 43 % des espèces sont en diminution sous la pression d’une exploitation irrationnelle et du changement climatique. L’auteur plaide pour une gestion durable intégrant l’agroforesterie, la domestication et le reboisement afin de pérenniser ce trésor nutritionnel et garantir la sécurité alimentaire à long terme au Sénégal.
