Incluye desde la cantidad de toneladas de sangre que se pueden obtener en el mundo de las principales especies animales (pollos, cerdos y bovino), evalúa su potencial nutricional, integrando las principales moléculas proteicas de la sangre. Re visa las formas en que se realiza el sacrificio de los animales en el mundo. tomando en cuenta cultura y creencias religiosas, así como, nivel de desarrollo económico: Analiza las normas existentes para el sacrificio de los animales. Parte medular es la industrialización de la sangre. Primeramente, en la producción de sangre entera y posteriormente en la industrialización del paquete globular y del plasma. Evalúa los diferentes productos surgidos de esta industrialización y finalmente se expone el trabajo y conocimiento generado por nuestro grupo, con más de 15 años dedicados al tema. El libro pretende ser una herramienta para todos los involucrados en las áreas relacionadas con la alimentación tanto humana como animal, así como la ecología.
