Nous avons isolé et caractérisé des bactéries hydrolysant l’acide tannique à partir du sol. Un sol autour d’un abattoir est continuellement inoculé avec des bactéries aérobies provenant du rumen des animaux. La microflore des ruminants est capable de dégrader les composés phénoliques tels que les tanins. Le sol contenant la microflore des ruminants près de l’abattoir est cultivé sur un milieu de Bushnell et Hans contenant de l’acide tannique. Trois colonies bactériennes ont été isolées, cultivées pour identification, puis analysées pour caractérisation biochimique et caractérisation physiologique. En outre, l’activité tannase et l’activité de dégradation des protéines de tanin de chaque isolat ont été déterminées qualitativement.
