L’ingegneria genetica (chiamata anche modificazione genetica) consiste nella manipolazione di questo programma principale. I geni, provenienti per lo più da altre specie spesso totalmente estranee, vengono inseriti nel 'programma principale' genetico. Geni provenienti, ad esempio, da pesci, scorpioni, batteri e virus sono stati inseriti nelle piante alimentari nell’ambito di progetti di ingegneria genetica. L’ingegneria genetica è una delle tecnologie più importanti attualmente a disposizione degli scienziati. Questa tecnologia è stata fondamentale per il sequenziamento del genoma umano e ha notevolmente aumentato il potenziale di sviluppo di nuovi farmaci. Uno dei primi progressi dell’ingegneria genetica ha riguardato l’ormone insulina. Il diabete, una patologia che colpisce milioni di persone, impedisce all’organismo di produrre una quantità sufficiente di insulina necessaria alle cellule per assorbire correttamente lo zucchero. In passato i diabetici venivano trattati con insulina supplementare isolata da maiali o mucche. Sebbene questa insulina sia molto simile a quella umana, non è identica. L’insulina bovina è antigenica nell’uomo. Gli anticorpi prodotti contro di essa ne distruggono gradualmente l’efficacia.
