O colagénio é a proteína mais abundante nos sistemas dos mamíferos e pode ser encontrado em órgãos como os rins, os ossos, o coração, o fígado, a pele e os dentes. O colagénio é definido como uma molécula trímera em espiral, cada uma das quais inclui a sequência repetida de aminoácidos Gly-X-Y, em que X e Y são normalmente aminoácidos de prolina e hidroxiprolina. A utilização de colagénio de diferentes fontes também está relacionada com a sua estabilidade térmica, que pode ter uma relação direta com a temperatura corporal e o ambiente de vida de várias espécies, e a estabilidade térmica da proteína de colagénio está diretamente relacionada com a composição de aminoácidos. Os colagénios fibrilares são os colagénios I, II, III, V, XI, XIV e XXVII. Os colagénios não fibrilares são os colagénios IV, que é o colagénio da membrana basal, o colagénio VII, que é o colagénio de ancoragem, os colagénios VI, XXVIII, XXIX, que são colagénios de construção de microfibras, e os colagénios VIII e X, que são activos na formação de sistemas de rede de colagénio.
