Os biopolímeros são uma classe de macromoléculas produzidas por organismos vivos. Estas macromoléculas são responsáveis pelas funções biológicas de movimentos moleculares, homeostase e catálise. Para melhorar os biopolímeros no sentido de um maior desempenho e melhor funcionalidade, a compreensão do seu comportamento físico-químico e a sua resposta a estímulos externos são de grande importância. Neste estudo, as caraterísticas de vários biopolímeros funcionais, tais como a hidroxietilcelulose (HEC), o seu análogo hidrofobicamente modificado (HM-HEC), o dextrano, o hialuronano (HA) e a mucina, foram investigadas com o auxílio da reologia, da dispersão de luz a pequeno ângulo (SALS), da dispersão dinâmica de luz (DLS) e da dispersão de neutrões a pequeno ângulo (SANS). Para determinar o peso molecular e o índice de polidispersão, foi utilizado o fracionamento assimétrico de fluxo de campo-fluxo (AFFFF). As caraterísticas destes biopolímeros funcionais foram estudadas sob vários estímulos externos, tais como temperatura, pH, cosoluto e reticulação química.
