Les biopolymères sont une classe de macromolécules produites par les organismes vivants. Ces macromolécules sont responsables des fonctions biologiques de mouvement moléculaire, d’homéostasie et de catalyse. Pour améliorer les biopolymères dans le sens d’une plus grande performance et d’une meilleure fonctionnalité, il est très important de comprendre leur comportement physicochimique et leur réponse aux stimuli externes. Dans cette étude, les caractéristiques de plusieurs biopolymères fonctionnels tels que l’hydroxyéthylcellulose (HEC), son analogue modifié hydrophobe (HM-HEC), le dextrane, l’hyaluronane (HA) et la mucine ont été étudiées à l’aide de la rhéologie, de la diffusion de la lumière aux petits angles (SALS), de la diffusion dynamique de la lumière (DLS) et de la diffusion des neutrons aux petits angles (SANS). Pour déterminer le poids moléculaire et l’indice de polydispersité, on a eu recours au fractionnement asymétrique par champ d’écoulement (AFFFF). Les caractéristiques de ces biopolymères fonctionnels ont été étudiées sous divers stimuli externes tels que la température, le pH, le cosoluté et la réticulation chimique.
