Os resíduos agrícolas são as grandes quantidades de resíduos sólidos gerados durante o cultivo, preparação e consumo de frutas e legumes. Podem causar problemas de eliminação, contaminação e perda de nutrientes e biomassa importantes. Os resíduos agrícolas têm o potencial de serem transformados em produtos utilizáveis ou mesmo utilizados como matérias-primas por outras empresas. Uma área promissora é a utilização de resíduos de processamento de frutas e legumes como fonte de compostos úteis. Assim, este estudo chega à conclusão de que a casca da melancia, um subproduto significativo do fruto da melancia, tem um enorme potencial nutricional e pode ser empregue com sucesso em composições alimentares. A análise proximal do pó da casca da melancia revelou quantidades notáveis de cinzas, gordura e proteínas. Além disso, as propriedades físicas do pó da casca de melancia - incluindo a densidade aparente, a densidade aparente aerada, a densidade de batida, o rácio de Hausner e o índice de Carr - mostraram que era adequado para utilização em preparações alimentares e que tinha uma boa fluidez.
