Las proteínas se conseguían con poca frecuencia y consistía principalmente de proteínas basado en mariscos, fuente de aceites grasos beneficios de tipo omega 3, y proteína sin grasa saturada.EL cambio drástico asociado con las enfermedades crónicas que comúnmente vemos hoy dia, comenzaron a producirse en la década de los 1950 y continúan aun dia.Cambios como el aumento de las porciones de comida. Cambios en la composición y calidad de los alimentos producido hoy dia. Comidas de poca calidad nutricional, procesados y refinados para prevenir que se echen a perder, y extender su vida de venta, pero proceso que le extirpa su contenido nutricional. Comidas como las que comemos hoy diariamente, repleta de grasas saturadas, azucares y endulzantes, sustancias químicas, colorantes, y saborantes. Tanta alteración, que muchas veces ni se reconoce lo que se esta comiendo.Durante estas ultimas décadas, ha habido un aumento en el uso de maíz y productos alimenticios que proviene del maíz, en la producción y composición de las comidas.
