A aplicação de ensaios de digestão in vitro como substituto para estudos de ingestão humana é importante na avaliação do risco potencial de contaminantes para os seres humanos. Os ensaios simulam a libertação de contaminantes de matrizes de amostras (solo) num procedimento de três etapas (boca, estômago, intestino delgado). Neste estudo, a bioacessibilidade oral do cobre (Cu) foi investigada utilizando quatro solos adicionados em laboratório e um solo historicamente contaminado. A bioacessibilidade correlacionou-se com a textura do solo, enquanto o pH do solo teve um efeito menor. A bioacessibilidade em solos recém-corrigidos foi proporcionalmente semelhante à dos solos historicamente contaminados, um resultado diferente do relatado por outros autores. Além disso, os ensaios realizados em jejum produziram resultados diferentes dos ensaios realizados após alimentação. As medições da assimilação de metais através da ingestão direta representam uma via importante de exposição e o seu valor empírico relativo permite compreender o valor dos dados modelados.
